Abstract:
A food preservative composition comprising a N-alkyl-dibasic amino acid alkyl ester salt in combination with liquid smoke. Preferably, the food preservative composition comprises a N-alkyl-dibasic amino acid alkyl ester halide salt in combination with liquid smoke. The particularly preferred composition comprises N-lauroyl-L-arginine ethyl ester hydrochloride in combination with clarified liquid smoke. The composition preferably also contains a surfactant and/or a solubilizer and/or a non-toxic GRAS solvent.
