Abstract:
A mannitol oxidoreductase is isolated from vascular plants which is NAD. sup. + dependent and which converts mannitol to mannose. A preferred source of the mannitol oxidoreductase is Apium graveolens, particularly Apium graveolens L. var. rapaceum (Mill. ) Gaud. (celeriac) and Apium graveolens L. var. dulce (Mill. ) Pers. (celery). DNA encoding of the mannitol oxidoreductase may be used in the production of the enzyme.

Abstract:
Fresh whole produce is placed in a container and continuously purged for about 30 to 120 minutes with oxygen or carbon dioxide gas. The container is then filled with a brine solution and the produce allowed to stand for a period of about 2-24 hours, thus resulting in superior pickled produce.
