A tar-depleted, concentrated liquid smoke is made that has superior flavoring and coloring abilities, low phenolic content, and a low acid content. It may also be partially neutralized to form a low viscosity, partially neutralized, tar-depleted, concentrated, liquid smoke composition. Both the partially neutralized and unneutralized compositions are suitable for use in commercial process equipment to make smoke impregnated cellulosic food casings.

Abstract:

A joining system for flat end discs is used in an elongated encased food product. The food casing is joined to the flat end discs permitting food stuffing of the casing. An adhesive joining, a clamping joining, a tension band joining or a piercing joining takes place in an area external to and within the peripheral boundaries of the flat end discs. The axial outward force of the food product on the discs is thus coupled to the axial tension of the casing joined to the discs.

A method and apparatus for stuffing food product into shirred casing having an important application in the stuffing of large muscle groups such as whole boned hams. A demountable stuffing horn carries its own supply of shirred casing compressed in place at a high packing efficiency. Means are provided for readily and efficiently dismounting a horn from the stuffing machine when its casing supply is expended and mounting a replacement with a new supply in its place. Internal holdback means on the horn, manipulated through the casing by an external control device on the machine, provide a wide range of casing holdback force.

Abstract:

A casing article for use in automatic production of frankfurters and the like includes a tubular core and a shirred casing stick carried by the core. The core can function as a disposable stuffing horn and, for this purpose, it has one end receivable in the discharge of the stuffing machine including a flange which is engaged and rotated by a rotating chuck of the stuffing apparatus. Also disclosed are modifications to the stuffing machine to make the machine compatible with the casing article, an end-of-casing monitor, a carrier for moving the casing article to a stuff position and a method for operating the stuffing machine to stuff out the casing and produce linked frankfurters.
