A food tray adapted to be removably located in a predetermined position in a compartment is provided having a tray body and a fixed movable stop member. The tray body includes a first end and a second end, a bottom and a sidewall structure defining a volume. The fixed movable stop member is located at one end of the tray body and is movable between a retracted position and an extended position. When the tray is inserted in the compartment in the predetermined position, the fixed movable stop member is in the extended position and restrains further insertion of the tray into the compartment. A method of making a food tray in accordance with the invention is provided. Also provided is a method of storing food within a food tray to be contained in a pass-through compartment.

A load control system and method of time multiplexing power to a plurality of holding shelves in a food holding cabinet to allow total cabinet power to be limited to electrical distribution capabilities. This method allows for individual shelf heaters to be utilized normally to maintain food temperatures during normal use and modulates power when multiple shelves demand heating that would normally exceed branch circuit capabilities thus tripping the breaker. The system monitors temperature of each shelf and based upon demand executes a logical demand schedule for each shelf heater output (time multiplexing or modulating AC power to each) such that total system demand does not exceed available power to the system.

Fryer System With Floating Check Valve For Vacuum Release On Oil Manifolds
A fryer system and a check valve useful in the fryer system or in other applications. The check valve does not require electricity or springs, but rather operates based on fluid flow and/or pressure. The check valve includes a sealing member that is disposed in a chamber. The chamber is in fluid communication with ambient air and a fluid container, such as a rear return manifold in the fryer system. As fluid, such as cooking oil, is supplied to the manifold, the cooking oil rises in the chamber of the floating check valve. The sealing member floats on the rising cooking oil until it seats in a seal so as to close the fluid communication with ambient. When the cooking oil is drained from the manifold, the sealing member disengages from the seal and floats in the chamber to a retainer that allows ambient air to pass through the fluid communications and chamber to counteract any vacuum in the ullage of the manifold.

A deep fryer having a plurality of fryer pots disposed in the deep fryer. Each of the plurality of fryer pots having a first temperature sensor, a second temperature sensor a drain valve and return valve. The system further has a controller that is pre-programmed to count a number of cooking cycles. After the first temperature sensor senses a first predetermined temperature, oil drains from the fryer pot through the drain valve and when the second temperature sensor senses a second predetermined temperature the oil has substantially returned to the fryer pot through the return valve.
